Tell about your favorite boss fight or fights if you can't place just one. Who you were fighting, and what game it was from. One of my favorite boss fights was against The Boss at the end of Metal Gear Solid 3: Snake Eater. The story behind it made the battle very emotional, and it will stick in my head for some time.

With the exception of Doku and Dynamo, most every boss from Ninja Gaiden, one of the few games that makes me feel like I actually accomplished something after killing one.
