You do make a good point. However, the real reason is that you're confusing the traditions from a pagan holiday of fertiltity that the Catholic church and chocolate companies integrated into the celebration of Easter, and the death of Christ. The whole egg thing originated from two sources: -The aforemention pagan traditions -The old Catholics tradtion of eating eggs on Easter, which started because many of them gave up eggs for lent, and easter was their first chance to eat them afterwards. In truth, eating Marshmellow Peeps has about as much to do with Jesus' sacrifice as lowered prices at car dealerships have to do with memorial day: it's something traditionally done on the holiday, but has nothing to do with the true meaning. No Christian denomination (at least, not a Bible-beleiving one) claims painted eggs or giant rabbits as part of salvation.
