What Hitomi is doing is she's trying to get an idea of what's going on out in the world by trying to piece together information that she gets from what her tormenter asks and talks about when any of the slave girls are around him.

The answer to "What profession did hitomi have before she was made a slave" is... Prostitute. Most prostitutes have a knack for learning about thier clients without really having them fill out any specific details about them. The can take small bits of information and piece it all together to see what makes their clients tick. a good prostitue can know what turns on her client long before they get to the bedroom. Hitomi is using this skill to get a picture of the world outside the dungeon wall by investigating the information she gets from the questions her tormenters ask her and the other slave girls.
