As I've said before, Erin takes after Rachel when it comes to her sex drive. She would've still been attracted to David even when dating Matt. At the very least, she should want to go home to Matt at this point, but early bonding would make it to where it'd be only Matt that turns her on. Later on, other male dragons would just make her hot for Matt.
