You know, I am kinda torn between wanting her to realize Steve is Death right before he kills her, or him leaving her alive with that knowledge to drive her crazy now.

You know, Mal, I did that once with an AD&D group. I realized that the big bad, who had a 25 Int. and 25 Wis., wouldn't just blindly go to his doom. So I thought it out. No matter what the Big Bad was doing, prophecy was going to be fulfilled. He would be killed right after achieving Godhood. And then it dawned on me/him: I'm already nearly all-powerful, immortal, and have a damn fine thing going... why become a God? At which point he visited the PCs, gave them the artifacts needed for his Godhood, and said "I quit. I'm going on vacation. You boys have fun now!" The best part was one player who plaintively asked "Can he do that?"
