Everybody underestimates children, even (sometimes I think especially) so-called professionals do from time to time, and that's a huge mistake! It comes from ignoring the individual, and that, too, is a huge mistake which most who should know better happily make and those who do know better are forced to make by the former. [/teacher's rant over ;)]
Aside from having to define some words now and then and working with a reduced attention span, I have not found having deep conversations with children any different than with adults. Sometimes, it gets difficult for the opposite reason than you'd expect because kids want to know more and are endless wells of questions. They will ask poignant things I never considered and don't have a prepared answer for.
