I think it also stems from the original novel in which the entire Franchise is based. If memory serves, Cerberus was like the main ally demon in the first book (and possibly the whole series, I don't know) which is also why the Cerberus we know and love looks more like a white lion than a 3 headed dog because apparently that's how he was described in the book.

@kou: That could be the fact that in SMT 1, Kerberos is created from a fusion of a demon and the MC's pet dog Pascal. And, even though he's slightly hostile later in the game, he eventually recalls his former master and joins without protest. As such, almost every instance of Kerberos being an NPC is generally friendly if not at least grudgingly helpful. Basically, his personality was cemented in the first SMT and to change it would be upsetting to the playerbase.

For some odd reason, Cerberus is usually portrayed as helping the player is nearly every game in the franchise in some form.
